CRAWFISH BISQUE

Tom attributes crawfish bisque to the boatmen who returned north up the Natchez Trace from New Orleans. “There’s a lot of connection to history here,” he says. “They brought back spices as well as cooking ideas.”

1¼ cups diced yellow onion

¾ cup diced red bell pepper

1 cup diced celery

2 tablespoons chopped garlic

⅓ cup seafood base

1 bunch thyme (10 ounces), stems removed

Dash of paprika

1 to 2 teaspoons Tabasco

8 cups (½ gallon) water

2 to 2½ cups heavy cream

1 pound crawfish tails, whole

4 tablespoons canola oil

4 tablespoons all-purpose flour

⅓ cup sherry
